The Sustainable Kitchen: Tequila, Bananas & Bats

This is a cooking class taught by the Conservatory’s Sustainability Educator, Heather Bell. During The Sustainable Kitchen series, Heather will talk about the small steps you can take to help the planet while she teaches you to cook something delicious. Bats can get a bad rap but they have key roles in their ecosystems. For this class, we’ve invited a bat expert to talk about why bats are so important and what we can do to protect them in an urban environment. Then, students will cook with bananas and tequila; two ingredients we wouldn’t have without bats. You’ll bake banana cream cheese muffins, a banana cake base with sweet vanilla cream cheese melted into the center. You’ll also make buckwheat banana pancakes with tequila maple syrup, accompanied by a tequila cocktail.
